Gingerbread Biscuits

What is Christmas without a beautifully decorated gingerbread biscuit. It’s almost a tradition to incorporate gingerbread into the gorgeous holiday season. The biscuits is soft on the inside, yet firm on the outside. They are perfect for little fingers to decorate and being refine sugar free… They are also great for little ones to consume.


2-2½ cups plain flour
½ tsp baking soda
1 Tbsp ground ginger
1/2 cup coconut sugar
150g butter
1 egg, beaten

Melted chocolate, icing pens, sprinkles to decorate. 


2-Preheat oven to 160deg c.

Place flour, baking soda, ground ginger, coconut sugar, butter and egg in a bowl and mix together. If the texture appears a little dry.. add a tablespoon of water.
Roll dough out onto parchment paper with a little flour to stop it from sticking.
Place a baking sheet in between dough and roll out till the dough is about 1cm thick.
Cut out shapes and place on baking tray.
Put in oven for 10-12 mins.
Once cooled, decorate.
